This chicken fried rice will be your new go-to! Utilizing a $5 rotisserie chicken from Costco, you can whip up a dish that’s both super healthy and versatile.
Bonus points: this meal is perfect for using up leftovers, or as a way to clean out all of the frozen veggies from your freezer.
Ingredient
Olive oil (for sautéing)
1 tablespoon sesame oil
1 yellow onion, diced
3 garlic cloves, chopped
Salt and pepper, to taste
3 cups cooked rice (brown or white, leftover or fresh)
1 head of broccoli (or 1 bag of frozen florets)
1 cup frozen peas
1 cup frozen pepper medley (fresh red and yellow peppers work too!)
¼ cup soy sauce (or Tamari for a gluten-free option)
1 tablespoon brown sugar
1–2 cups shredded rotisserie chicken
Optional Garnishes:
- Chopped cilantro
- Chopped parsley
- Sliced scallions
- Crushed peanuts
- Sweet chili sauce
- Extra soy sauce
- Sesame seeds
Directions:
Prepare the Chicken: Remove the skin and bones from the rotisserie chicken and shred the meat. Set aside 1–2 cups for the fried rice. If you have kitchen gloves, they work well for this, or use two forks.
Sauté Aromatics: In a large pan, heat olive oil over medium heat. Add the diced onion and chopped garlic, seasoning with salt and pepper. Sauté until the onion becomes translucent.
Cook Vegetables: Add broccoli to the pan. If using fresh broccoli, you can steam it beforehand or cook it directly in the pan until tender. Stir in the frozen peas and pepper medley, add salt and pepper to taste, and cook until all vegetables are heated through.
Add Rice and Chicken: Incorporate the cooked rice and shredded chicken into the pan, mixing thoroughly with the vegetables.
Prepare the Sauce: In a small bowl, whisk together the soy sauce, sesame oil, and brown sugar. For a saucier dish, feel free to double the sauce ingredients.
Combine and Heat: Pour the sauce over the rice mixture, stirring well to ensure even coating. Continue to cook until the entire dish is heated through and no liquid remains.
Garnish and Serve: Transfer the fried rice to serving dishes and top with your choice of garnishes, such as chopped cilantro, parsley, sliced scallions, crushed peanuts, sweet chili sauce, additional soy sauce, sesame seeds or even a fried or poached egg.
